Guaytiew Gaeng (Curry noodles)
I remember the first time I had this dish. I was with a friend at a Bangkok street market when we decided to sit down at a street food restaurant with the words HALAL in big letters on the sign. I saw the word for noodles, “Guaytiew”, and the word for Curry, “Gaeng”, and thought it was a novel idea I’d like to try. It was one of the best decisions I’ve made. I fell instantly in love.
Guaytiew Gaeng, literally translated as curry noodles, is one of the most famous Thai-Muslim dishes. The richness of the curry pair well with the noodle and soft boiled egg. This dish is very common with chicken or beef, the longer it stews, the better! This is one dish that we would not recommend using pork since it’s a Muslim dish. It looks like there’s a lot of elements to this dish but it is really easy to make this authentic Thai dish at home. Please give it a try and hopefully you will fall in love with it just like me 🙂
Guaytiew Gaeng (Curry noodles)

4 chicken drumsticks
2tbsp Massamun curry paste
2tbsp Red curry paste
800ml coconut milk
3tbsp fish sauce
4tbsp palm sugar
egg noodles (or noodle of your choice)
2 boiled eggs (cut in half)
1/2 pack of tofu (cut into pieces)
one handful of beansprout (optional)
peanuts
fried red onion
coriander
chili oil (optional)
Instructions
- Add around 5-6 tablespoon of coconut milk into a pot. Turn on medium high heat, when the coconut milk starts to release the oil, add in curry paste. Stir fry until fragrant.
- Add in chicken, stir fry untill they are coated with curry paste, then add in the rest of the coconut milk. Let the chicken be until it’s fully cooked.
- When the curry is in full boil, add in seasoning (fish sauce and palm sugar) to taste, then add in the tofu. Turn the heat to low and let the curry be.
- In another pot, add water and wait until it become full boil. Cook noodle of your choice according to the package. Then add your noodle in a bowl with beansprout.
- Add the curry on top of the noodle. Garnish with boiled egg, peanut, coriander, chilli oil (optional) and fried red onion on top. Voila! enjoy your curry noodles 🙂
