Khao Kluk Gapi (Shrimp paste fried rice) – This one is for the Thai food aficionados out there. If you’ve mastered the fried rice, If you’ve mastered the Mhoo Ping (grilled pork), try your hand at this shrimp paste fried rice!

Shrimp paste is stinky. There, I said it. It smells so bad that we’re embarrassed to cook with it where others can smell it. And when we cook it by frying it…. the smell intensifies. But I’ll be damned if it isn’t SUPER DELICIOUS! This shrimp paste fried rice has also been called rainbow salad by the beautiful way it is presented, brown shrimp rice, Red caramelized pork, yellow omelet, pink-red onions, and a green lime slice. How can something so beautiful come from something so Stinky!? You’ll understand when you eat it…it’s addictive. Try to make it at home, but be aware that it will make your kitchen stinky, so open a window or warn anyone who might be home of the smell. Shrimp paste should be available at your local Thai or Asian store.

Ingredients

  • Fried rice
  • 1 tbsp oil

  • 2 bowls of cooked rice (cold)

  • 4 tbsp shrimp paste

  • Toppings
  • 2 shallots or red onions (thinly sliced)

  • 50 g of dried shrimps (fried) – optional

  • 2 eggs for omelet (Make it into a thin sheet that you can roll up an thinly slice)

  • 2 stalks of long bean (cut into 0.5cm long) – optional

  • 3 Thai red chilies (thinly sliced) – optional

  • 1/2 cucumber (thinly sliced)

  • 1 lime (cut into wedges)

  • Caramelized pork
  • 100 g of shallots or red onions (thinly sliced)

  • 2 tbsp oil

  • 500 g pork belly (cut into bite size pieces)

  • 3 tbsp oyster sauce

  • 3 tbsp fish sauce

  • 1 tbsp black soy sauce

  • 100 ml water

  • 75 g palm sugar

Instructions

  • Part 1: Making caramelized pork
  • Put a pan on medium high heat, add oil and shallots and stir fry until it becomes translucent.
  • Add in the pork, oyster sauce, fish sauce and black soy sauce, stir fry until the sauce coat the pork. Then add water, let it boil for 10 mins.
  • Once the pork is cooked, add in palm sugar and stir until it dissolves. Turn off the heat and set aside.
  • Part 2: Making the fried rice
  • Put a pan on medium high heat, add oil and shrimp paste and stir fry until it becomes homogenous.
  • Add in rice, mix until the paste evenly coates the rice. Turn off the heat and set aside.
  • Part 3: Assemble
  • Put the rice in the center of the plate, place all the toppings (shallots, long beans, cucumbers, eggs, red chilies, dried shrimps and a lime wedge) on the side around the rice. Serve it like this.
  • Eat it by mix everything together and squeeze the lime on top.
