Khao Pad (Fried rice)

Khao Pad (Fried rice) is a very easy dish to make at home, it is one of the most common dishes that we usually make from scratch. It is comfort food to which you can add anything you like or whatever you have in the pantry and the end result always tastes like home. One indication of a good Khao Pad is that the rice that is dry and where very grain is separated. Mushy fried rice is a no-no! One easy way to achieve that is by using cold rice or leftover rice. Maybe if there is rice left from last night dinner, fried rice could be a great next day lunch! Leftover rice will help your Khao Pad easily separate when frying. Using freshly cooked rice, that is hot and full of moisture, tends to make your Khao Pad mushy when you add all the seasoning.

Ingredients

  • 2 small bowl of cooked Jasmine rice, approx. 350g (cold or refrigerated overnight)

  • 2 eggs

  • 1-2 spring onion (chopped)

  • 350g chicken inner fillet (cut into bite size)

  • 2 tbsp light soy sauce

  • 1 tbsp golden mountain sauce (optional)

  • 1 can of sweet corn (optional)

  • 2 tbsp chopped coriander

  • 1 tbsp oil

  • white pepper

Instructions

  • Turn on medium high heat, add oil into the pan. When the oil is hot, crack in the eggs. Scramble it until cooked.
  • Add in chicken, stir fry until it’s cooked.
  • Add in rice, all the seasoning sauces, use spatula to break the rice apart. Stir fry until the sauces are evenly distributed in the rice.
  • Add in corn and spring onion, mix well and turn off the heat.
  • Sprinkle some white pepper and corriander, served with tomato, cucumber and chili in fish sauce (optional).
