This may be a simple dish, but it has the power to transport you from a cold gray suburb of Stockholm to the golden shores of a tropical land.
Khao Pad Sapparot (Pineapple Fried Rice)

30 g of protein (chicken thigh, pork or shrimp)
half of the onion (chopped)
1 bowl of cooked rice *tips: use cold rice (cooked) or the rice that has been cooked and refrigerated overnight, it will help prevent the fried rice being soggy
1dl of pineapple (chopped into cubes)
1/2 tsp white pepper
1 tbsp light soy sauce
1 tbsp oyster sauce
2 tsp curry powder
1 tbsp roasted cashew nut
1 tbsp spring onion (chopped)
1 tbsp raisins
1 tbsp vegetable oil
Instructions
- Add oil into a pan, turn on medium high heat. Once the oil is hot, add in chopped onion.
- When the onion starts to turn brown, add the protein of your choice.
- After the protein is thoroughly cooked, add the cold rice. Add all the spices and seasonings. Mix until the rice turn evenly yellow.
- Add raisins and pineapple, stir fry and distribute evenly then add spring onion.
- Turn off the heat, sprinkle cashew nut on top and serve.
