Massamun curry
Massamun curry is perhaps the most famous curry in the world. In 2011, CNN named the dish the world’s best food. “The King of Curries” they called it. I do not know if that’s true, but it’s really tasty. A mild curry with potatoes that makes it perfect for both adults and children. Massamun curry

3 chicken thigh or 4 chicken drumsticks
400 ml coconut milk
90 ml water
3 tbsp Massamun curry paste
1 big onion
3 potatoes
30 g roasted peanuts
3 tbsp tamarind juice or paste
4 tbsp palm sugar
3 tbsp fish sauce
Instructions
- Prep the veggies:
Cut potato into bite size pieces.
Cut onions into slides. - On medium-high heat, add around 4tbsp coconut mink into the pot, wait until the coconut oil start to release from coconut milk, add Massamun curryy paste, stir until fragrant.
- Add chicken, stir until the paste is evenly distributed to the chicken. Then add potato, onion, the rest of the coconut milk and water.
- Wait until the chicken is cooked, add fish sauce, palm sugar and tamarind juice. Add peanuts and wait for the curry to boil.
- The longer it boils, the more delicious it will get. Taste continuously and season it to your preference before serving with freshly cooked jasmine rice!
