Ingredients

  • 400g pork neck

  • 1 tbsp Thai oyster sauce

  • 2 tbsp chopped spring onion

  • 2 tbsp chopped corriander

  • 1 shallot (thinly slided)

  • chilli flakes (to taste)

  • 2 tbsp Kao Kua (toasted rice powder)

  • 2 tbsp palm sugar

  • 3 tbsp lime juice

  • 2 tbsp fish sauce

  • 7tbsp water

Instructions

  • Marinade the pork in oyster sauce. Let it sit for 15 mins.
  • Grill pork neck until it’s 80% cooked through, then thinly slide it.
  • Add the pork into a pot, add in water (approx. 7 tbsp), wait until it starts to boil, add fish sauce, palm sugar, chilli flakes, Kao Kua, shallot, spring onion and corriander, mix well.
  • Turn off the heat, add lime juice and mix again. Serve it with some chopped greens on top.
