Pad Krapao (Holy basil stir fry)
Pad Krapao (Holy basil Stir fry) is one of our favorite dishes. This simple yet tasty dish is a classic example of what Thai food has to offer. “Krapao” is the Thai word for holy basil and “KRA-PAOW!” is the sound of the chili and garlic mixture hitting your taste buds! A favorite on the streets of Bangkok as well as in all Thai homes. I personally love to break the egg yolk and let it flow over the whole plate while Palita loves to eat it more neatly, making each bite perfect. No matter how you enjoy eating your Pad Krapao, be sure to sit down and take a deep breath before going on this tasty ride! Clearly a highlight of any day!
Pad Krapao (Holy basil Stir fry)

2 tbsp Garlic
2 Thai Chilies
1 handful of Holy basil
1 tbsp Cooking oil
2 Eggs
500g Minced protein (e.g. tofu, pork, beef or chicken)
1 tbsp Fish sauce
2 portions of Cooked rice
Instructions
- Prepare the fresh ingredients: mince the garlic, chop the chillies and pluck and wash the holy basil leaves.
- Preheat a pan on medium-high heat, add in the oil into the pan. When the oil is hot, crack the eggs in, one at a time. Once the egg whites are cooked and egg yolks are still runny, take them out and set aside.
- In the same pan, put in the minced garlic and chopped chillies, stir fry until fragrant.
- Season with fish sauce to taste, distribute evenly.
- Turn off the heat, add holy basil, stir fry until wilted with the residual heat on the pan. (*tips: do not put holy basil in high heat, it will lose fragrance, flavor and color. )
- Plate on rice and top with the sunny side up eggs.
