It does not get much better than that! A mix between Thai and Japanese, this dish is right for anyone who loves sushi and Thai cuisine! Yum, more like Yummy Yum Yum!

Ingredients

  • 700g Raw salmon (without skin)

  • 50g Cherry tomatoes (cut in half)

  • 2 stalks Lemongrass (chopped)

  • 1-2 Spring onions (chopped)

  • 2 Shallots (chopped)

  • 3 stems Corriander (chopped)

  • Iceberg lettuce

  • Dressing
  • Dressing

  • 5 cloves Garlic (sliced)

  • 2 Fresh Thai chillies (chopped)

  • 2 tbsp Fish sauce

  • 3 tbsp Lime juice

  • 1 1/2 tbsp Palm sugar

Instructions

  • Slice salmon fillet into bite size pieces and set aside.
  • Mix all the dressing ingredients (garlic,chilies, fish sauce, palm sugar and lime juice), mix until sugar dissolves.
  • Add salmon, cherry tomatoes, shallots, lemongrass and mix well.
  • Sprinkle with chopped coriander and spring onion, serve on a bed of iceberg lettuce.
